Abstract

By means of physicochemical characterization of the honey, it is possible to establish standards in accordance with possible vegetation, edaphic and climatic factors of the regions where they are produced as well as giving information regarding its quality. Thus, the present work aimed at determining total sugars, reducing sugars, apparent sucrose, diastase activity, hydroxymethylfurfural, humidity, electrical conductivity, pH, acidity, formaldehyde index, proteins and color of 31 honey samples produced by Apis mellifera in the area of Cassilândia county, Mato Grosso do Sul State. The results indicate that the average values of the chemical characteristics of almost all samples are whitin the limits established by the Brazilian legislation.
