Physico-chemical composition of honey of Apis mellifera L. from São Paulo State Cerrado, Brazil

Abstract

This reasearch was carried out to evaluated the physicochemical composition of honey samples from cerrado areas of Pirassununga Campus €œUniversidade de São Paulo€, São Paulo State, Brazil, comparing with the established Brazilian regulamentations. Honey samples were collected from five hives located in two different areas, from May 2001 to April 2002. The samples were submitted to the following analysis: color, water content, protein, ashes, electrical condutivity, hydroxymethylfurfural, pH, acidity, formaldehyde index, sugar content, and minerals. It was obtained 34 samples of honey, and the higher production occurred from August to November. However from December to February it was not possible to collect samples. The averages of the analyzed physicochemical characteristics of honey samples, are agreeing to the established Brazilian standard regulation. Nevertheless, 55.9% of the samples showed divergent results for those norms at least in one characteristic, demonstrating the needs of revising the established values for the Brazilian honey classification.
