Abstract

A total of 155 honey samples, being 94 from wild flowers, 27 from Eucalyptus flowers and 34 from Citrus flowers produced by Apis mellifera were collected from 96 locations of the State of São Paulo. The following parameters were analysed: the moisture content, acidity, pH, formol index and the percentage of honey samples that followed the Brazilian legislation for honey quality. According to the results, the characterization of honeys was established by ranges for each parameter studied: 16.0 to 23.4% for moisture content, 12.5 to 75.5 meq/kg for acidity, 2.3 to 5.1 for pH and 5.0 to 20.5 mL/kg for formol number. The percentage of honey samples that followed the Brazilian legislation for quality were for moisture content, 83.8% and for acidity 94.8%.
